- 1 tablespoon miso paste
- 1 scallion, washed and sliced
- 1 mushroom, washed and sliced
- 1/4 cup tofu, cubed
- 1 cup water
Fill a mug with miso paste and stir with a spoon until dissolved.
Add in tofu, mushrooms and scallions.
Microwave 1-2 minutes until hot.
Carefully remove from microwave. Enjoy!
Miso is a super simple way to have a quick cup of soup without a lot of work. You can add whatever you would like to it, or just have the broth for a simple light meal.
My favorite Miso is by South River. It has a sweetness to it that works well in other recipes and as a substitute for broth. It is only available in health food stores or online.
