Creamy Miso Vegan Salad Dressing

INGREDIENTS

  • 1/3 cup rice vinegar
  • 3 Tablespoons Sweet White Miso
  • 1 Tablespoon sesame oil
  • 1/2 cup or half a bunch fresh cilantro
  • 1/2 cup avocado or olive oil

 

Wash and roughly chop the cilantro, stems and all. If you like cilantro in other recipes, you can save the stems just for this recipe. They have all the flavor, and will be chopped up in the blender anyways! Add the cilantro to a blender and top with all the other ingredients.

If it is a little too thick add water or a bit more vinegar until it is to the right consistency for you.

Traditionally this recipe calls for a little added honey. You probably won’t need to if you are using the miso and vinegar I recommend. Otherwise, feel free to add a little to your dressing if needed.

The miso can be found online or at your local health food store. It is a great product worth having. The recipe was adapted from one from printed on their jar. You can use it in place of broth in a recipe or to make a wonderful miso soup.

The vinegar is mild in flavor, so it doesn’t need as much sweetness or oil added to balance it out.
