INGREDIENTS
- 1 pint of cherry tomatoes, or 2-3 ripe fresh tomatoes
- 1/4 cup of fresh basil
- 1/4 cup of olives- Kalamata or black, if desired
- 1 fresh loaf crusty bread, sliced thin (look for one with no added preservatives) A small loaf of french bread or a baguette can be used
Balsamic Dressing
- ½ cup Balsamic vinegar
- ½ cup Olive oil
- 2 Tablespoons Dijon mustard
- 2 Tablespoons Honey
PREPARATION
Wash and cut tomatoes in half, then in half again.
Wash basil and remove stems. Chop basil into thin strips
Drain olives and slice
In a medium size bowl, add chopped tomatoes, basil, dressing and olives if desired.
Mix Balsamic dressing in a container that can be sealed.
Shake until blended thoroughly.
Add enough dressing to coat your tomatoes, basil and olives
Slice bread about a 1/4 inch thick.

Put in a bowl with a spoon, and serve with the sliced bread.
