  • 1 pint of cherry tomatoes, or 2-3 ripe fresh tomatoes
  • 1/4 cup of fresh basil
  • 1/4 cup of olives- Kalamata or black, if desired
  • 1 fresh loaf crusty bread, sliced thin (look for one with no added preservatives) A small loaf of french bread or a baguette can be used


Balsamic Dressing

  • ½ cup Balsamic vinegar
  • ½ cup Olive oil
  • 2 Tablespoons Dijon mustard
  • 2 Tablespoons Honey



Wash and cut tomatoes in half, then in half again.

Wash basil and remove stems. Chop basil into thin strips

Drain olives and slice

In a medium size bowl, add chopped tomatoes, basil, dressing and olives if desired.

Mix Balsamic dressing in a container that can be sealed.

Shake until blended thoroughly.

Add enough dressing to coat your tomatoes, basil and olives

Slice bread about a 1/4 inch thick.
Put in a bowl with a spoon, and serve with the sliced bread.

Be careful with your choice of bread. Many types, even the breads baked fresh at your local grocery store, are pre-made and loaded with preservatives and chemicals.

Look at the labels when buying any type of bread, and look for local brands like the one below that are baked fresh daily and that have less ingredients and ingredients that are easy to understand.Take a few minutes to look for those. Yes, they will not last for weeks in your cabinets, but should you really eat something that does?
